Solving Hunger One Recipe a Day...

I've been quite on-point with cooking lately, even while suffering through the flu last week.

Here's 10 more recipes to add to the collection, including some that turned out pretty damn good (if I may say so myself):

Recipe #310: Slow Cooker Jambalaya from Plain Chicken
Unfortunately, I put this recipe in the crock pot on Monday morning before work, and by the time I got home from work on Monday, my flu was at full-force and I was confined to my bed for the next 3 days while my husband at the jambalaya in the dark so I could sleep.

Oh, the joys of the flu... the joys of a studio apartment... and the (real) joys of a loving husband.

BUT... I did get a few bites of this a few days later when I was feeling up to it (not that I could taste much). The hubby reported that it was a little too healthy (with the turkey sausage) for his taste.

Recipe #311: Lentil Soup from CutOutandKeep
A few days into my dehabilitating sickness (seriously, it was bad), I finally mustered up the desire to make and eat food. Using only ingredients we had in the house, I threw together this lentil soup that kept my belly full for the rest of the week. 

Recipe #312: Cucumber and Avocado Sandwich from GoodLifeEats
I love avocados, and I love cucumber sandwiches, so this sandwich was a good combination of the two. And that's all there is to say about that.

Recipe #313: 2 Ingredient Cheese Biscuits from WonkyWonderfulYum. Yum yum yum. Biscuits stuffed with fresh mozzarella cheese coated in oil. These were a wonderful side dish to our spaghetti squash main dish, and they were delicious leftovers as snacks the next day. So easy to make, too!

Recipe #314: Lasagna-Stuffed Spaghetti Squash from ArisMenu:
I bought two massive spaghetti squashes from the store last weekend, so tried out two different spaghetti squash recipes this week. In the end, I still prefer my spaghetti squash with some brown sugar... simple and sweet.
This Lasagna-stuffed spaghetti squash was good, but I would leave the meat out if I tried it out again. That cheese though...



Recipe #315: Spaghetti Squash Carbonara from HugsandCookiesXOXO:
The other spaghetti squash recipe was a carbonara recipe where the squash serves as the pasta substitute. Don't worry though, the bacon and bacon grease mixed in with the squash totally makes up for any healthy plans you had for dinner.
Overall, it wasn't quite the same as traditional bacony-starchy goodness of regular pasta carbonara, but it was good enough for the husband to eat it, so I would call it a success.

Recipe #316: Peanut Butter Microwave Fudge from NowYouCanPinIt:
This fudge was so easy, and so delicious, and so cheap, I couldn't believe it. Maybe it didn't hold up to my dad's secret family recipe for fudge, but it also didn't take $20 in ingredients and half an hour at the stove stirring for EXACTLY 6 minutes. I'd love to find a peanut butter-chocolate version of this fudge that's just as easy and just as delicious, but I guess that's wishful thinking, huh?

 Recipe #317: Pizza Stuffed Pretzel Rolls from DomesticFits:
These blew my mind. They were SO GOOD! My mouth is just watering from the salty pizza-y goodness, and it was kind of fun making them, too! I loved that the recipe called for pre-made pizza dough so I didn't have to deal with making my own. The only problem I ran into was that it took me until halfway through rolling out each roll to find my nitch... at first I wasn't rolling the dough thin enough so they were too small and sticking together, but once I got it... I got it.
THEN THIS AMAZING THING HAPPENED where I trusted the recipe and dumped these perfectly good bread pizza dough things in boiling water. As I did it, I kept imaging them coming out as this mushy mess, but they just got kind of crispy and that's what made them taste extra pretzely in the end.
Only one broke open and spilled out in the water and turned into a goopy mess.
Excuse me, while I go make these again.

 Recipe #318: Rosemary Garlic Butter Steaks from CookClouds:
Another amazing recipe...
Since we moved to New York City, we moved away from all things steak... the grill, the smoker, the parents who would invite us over for filet mignon. Besides the occasional special occasion where we make it out to a delicious steak house, I certainly haven't had my fill of medium-rare goodness... until this week when I tried out this recipe.
The trick was finding a recipe that just let me cook the steak on the skillet, without anything fancy. Except butter.

These steaks were fast, and easy, and delicious, and made me feel like we were in suburbia again.

Recipe #319: Cherry Pie Bubble up from Mandy's Recipe Box:
The last recipe of the bunch, I made this cherry pie bubble up tonight. It was fast, easy, sweet, and delicious, and a great use of our refrigerated canned biscuits. This is a great quick dessert to bring to a party or get together where you need something last minute.

Now, I'm hungry again from looking at all these pictures, and my fingers hurt from all this typing.
